Menu Plan Monday

mpmfall1I have a day off work this week so I’m cooking up a turkey dinner (I am thankful for half-price Thanksgiving turkeys!).  Perhaps not your traditional way to celebrate Remembrance day, but what better to do on a day off than cook something yummy?  Here is what else is on the menu:

Breakfast:  This week I made Crock-Pot Granola - so easy to make and so yummy!  I also want to try soaked oatmeal so I can have the rolled oats in the morning instead of just the quick-cooking stuff.

Baking:  Carrot cake with yogurt icing (this is a yummy and healthy whole wheat recipe and the icing is made with yogurt cheese – check back for the recipe later this week)

Apple Honey Pie (a perfect way to end a turkey dinner)

Main Meals

Veggie Stew with daikon and Biscuits

Garlicky Baked Butternut Squash and Rice & Lentils  (This was a real winner!  There were no leftovers at all!  I used a mixture of brown and red rice in the rice dish, I just discovered red rice this summer and love it.)

Carrot Casserole & Salad – this seems similar to the zucchini recipe we love so I thought I would give it a try, we still have carrots in the garden!

Freezer Meal – I still have soups in the freezer from the Food Party we had in October

Turkey Dinner – roast turkey, brown rice stuffing, sweet potatoes

Pasta with homemade tomato sauce

Friday Night Pizza

Next week I will be cooking lots of dishes with turkey leftovers!  Hope there are yummy things cooking in your kitchen this week.  For more inspiration, check out orgjunkie.com.

  1. Your carrot casserole looks good! I’ve never even heard of it, so I’m intrigued. My son likes carrots too, so this would be perfect.

      I made the casserole tonight – it was really good. I made a few changes – I grated the carrots instead of cooking them first, added an extra egg to make up for the loss in moisture, and cut the butter in half. I also grated a little cheddar cheese on top. Next time I think I will use four eggs. It was a great way to use up bread crusts too!

    Yum! These all look really good! I love cooked daikon so that stew sounds delicious. I also love red rice and other unusual rices. I have black rice on my menu this week!
